Hashbrowns

You’ll need:
1 zucchini
1 onion
1 small sweet potato
1 carrot
1 parsnip
Sea salt and pepper
Rosemary
Oregano
3 eggs
Grate all veggies or use food processor
Nuke for 4min, let cool slightly
combine in bowl with spices
whisk eggs and pour over veggie mix.
Mix thoroughly and shape into thin pancakes
Heat pan with coconut oil or bacon fat to medium heat,
Place hashbrowns into pan and cook until browned crispy on both sides.
Serve with scrambled eggs, bacon and fresh fruit.
