One of my all time favorite dishes, well worth the effort.
Jambalaya
Sauce Ingredients:
1/4 cup butter salted or EVOO or Coconut oil
3-4 large onions, diced
5 cloves of garlic, minced or buy pre minced in oil
2-3 green peppers, diced
2-3 red peppers diced
3 stalks celery chopped
5 cups spinach (optional and not true cajun, but still tasty and healthier)
2 cups red wine
40oz diced tomatoes (canned is fine)
1 cup low sodium chicken base (I make my own)
¼ cup Cajun spice(less if you like it mild)
2 tsp thyme
1 tsp sea salt
4 tsp ground pepper
Melt butter/oil in pot over medium heat
Add veggies and cook for 8-10min
Add garlic and cook for 2min
Add red wine and simmer to reduce by half
Add rest of ingredients and bring to a gentle boil
Reduce heat and simmer for 20min
Taste test and adjust to preference.
Meat:
6 andouille sausage(nitrate and gluten free, sub any sausage you like)
6 boneless skinless chicken breasts or thighs
1 pound of 30-40count shrimp, shells off
Cook all meat and chop chicken and sausage into bite size pieces
“Rice”
Chop 1 washed head of cauliflower into dime sized pieces and pan fry in meat juices
Serve sauce and meat over cauliflower.
